Snowball Cake

  • 2 envelopes unflavored gelatin
  • 4 Tbsp. cold water
  • 1 c. boiling water
  • juice of 1 lemon
  • 1 (No. 2) can crushed pineapple
  • 1 c. sugar
  • 1 large angel food cake
  • 1 can shredded coconut
  • 1 large container whipped topping

Directions

    Soften gelatin in cold water. Add boiling water and stir until dissolved. Cool. Add lemon juice, pineapple (with juice) and sugar.

    Chill until partially set. Combine half Cool Whip with mixture.

    Line a large bowl with plastic wrap. Break up cake into bite size pieces and alternate layers of mixture with cake layers. Refrigerate until firm (overnight).

    Unmold cake and frost with remaining whipped topping. Sprinkle generously with coconut.
