Snowcapped Raspberry Bars

Ingredients

  • 3/4 c. margarine
  • 3/4 c. powdered sugar
  • 1 1/2 c. flour
  • 3/4 c. raspberry jam
  • 3 egg whites
  • 3/4 c. sugar
  • 1/2 c. flaked coconut (optional)
  • 1 c. chopped walnuts

Directions

    Cream margarine and sugar until light and fluffy.

    Blend in flour.

    Press mixture evenly into bottom of ungreased 9 x 13-inch baking pan.

    Bake in a 350° oven for 12 minutes.

    Remove from oven and immediately spread on jam.

    Beat egg whites until foamy, add sugar, 1 tablespoon at a time.

    Continue beating until stiff.

    Fold in coconut and half the walnuts, spread over jam.

    Sprinkle with remaining walnuts and return to oven for 20 minutes longer.

    Cool before cutting into squares.
