  • 6 medium potatoes, peeled, boiled and drained
  • 2 eggs, beaten
  • 4 Tbsp. butter
  • 1/2 c. grated Velveeta cheese
  • 1/4 c. grated Romano cheese
  • 1 Tbsp. parsley
  • 1/2 tsp. garlic salt
  • salt and pepper to taste

Directions

    Combine all ingredients in mixing bowl; whip with electric mixer until smooth.

    Transfer to greased 1 1/2-quart baking dish. Bake for 30 minutes at 350°.
