- 1 1/2 c. raisins
- 2 Tbsp. butter
- 2 c. hot water
- 2 tsp. baking soda
- 2 c. sugar
- 1 tsp. cinnamon
- 4 c. flour
- 2 eggs
- 1 tsp. vanilla
- 1 c. chopped nuts
Directions

1Combine the first 4 ingredients in a bowl; cover and stand overnight.

2Next morning, combine sugar, cinnamon and flour; set aside.

3In a large bowl, beat together the eggs and vanilla.

4Add the flour mixture to this and beat well.

5Stir in the raisin mixture and nuts.

6Pour batter into 3 well-greased 1-pound coffee cans and bake at 350° for 60 minutes.

7Place the cans on a cooking rack and cool completely before removing the bottom of the can with a can opener.

8Push the loaf out of the can.

9Slice and serve with butter or cream cheese.
