- 4 filets of sole or flounder
- 2 leeks, sliced and washed
- 1 can artichoke bottoms, quartered
- 1 Tbsp. chopped garlic
- 1/2 c. chopped fresh tomato
- 1/2 c. white wine
- 2 tsp. chopped parsley
- 4 Tbsp. butter
Directions

1Saute sole fillets in 2 tablespoons of the butter.

2Remove from pan and keep warm.

3Add rest of butter, leeks, garlic and artichoke hearts.

4Saute until leeks are limp.

5Add tomatoes and white wine.

6Simmer 7 to 10 minutes.

7Season with salt and pepper.

8Top fish with sauce.
