Ingredients

  • 4 filets of sole or flounder
  • 2 leeks, sliced and washed
  • 1 can artichoke bottoms, quartered
  • 1 Tbsp. chopped garlic
  • 1/2 c. chopped fresh tomato
  • 1/2 c. white wine
  • 2 tsp. chopped parsley
  • 4 Tbsp. butter

Directions

    Saute sole fillets in 2 tablespoons of the butter.

    Remove from pan and keep warm.

    Add rest of butter, leeks, garlic and artichoke hearts.

    Saute until leeks are limp.

    Add tomatoes and white wine.

    Simmer 7 to 10 minutes.

    Season with salt and pepper.

    Top fish with sauce.
