- 1 lb. fillet of sole
- Dijon mustard
- grated Parmesan cheese
- cooked asparagus
- white wine
- lemon juice
Directions

1Soak the sole in lemon juice for 20 minutes and drain.

2Spread the mustard on the bottom of the fish.

3Generously shake on the Parmesan cheese.

4Take 2 to 3 pieces of asparagus and place in the center of the fillet.

5Roll the fish.

6Place in greased baking dish.

7Pour white wine over fish.

8Bake at 400° for 20 minutes or until fish is done.

9Sprinkle with dill and paprika for color.
