  • 2 tablespoons bacon fat
  • 3 cups all-purpose flour, sifted
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup, plus 2 tablespoons, stone-ground cornmeal
  • 1 extra-large egg, lightly beaten
  • 1 tablespoon unsalted butter, melted
  • 1 1/4 cups milk, warmed
  • 1/2 teaspoon minced jalapeno chili
  • 3/4 cup grated Sonoma Jack cheese
