- 2 tablespoons bacon fat
- 3 cups all-purpose flour, sifted
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup, plus 2 tablespoons, stone-ground cornmeal
- 1 extra-large egg, lightly beaten
- 1 tablespoon unsalted butter, melted
- 1 1/4 cups milk, warmed
- 1/2 teaspoon minced jalapeno chili
- 3/4 cup grated Sonoma Jack cheese
