- 6 eggs
- 1/2 c. granulated sugar
- 2 Tbsp. dark rum
- 2 Tbsp. butter
- 2 tsp. confectioners sugar
Directions

1Separate the egg yolks from the egg whites.

2Beat the yolks with the granulated sugar and rum until well blended.

3Beat the until they are firm but not stiff.

4Gently fold the whites into yolk mixture.

5Melt the butter in a 10 or 12-inch ovenproof skillet.

6When butter sizzles, turn the eggs into the skillet and cook over a low flame for about 7 minutes.

7Sprinkle the omelet with confectioners sugar and pass it under the broiler for about 2 minutes until glazed.

8Serve immediately.
