- 1 pkg. dry yeast
- 2 c. warm water
- 1 Tbsp. sugar
- 2 1/2 c. unbleached flour
Directions

1Sprinkle yeast and sugar over water in large bowl; stir to dissolve.

2Let stand until foamy, about 5 minutes.

3Add flour and whisk until smooth.

4Cover and let stand in warm place until sour aroma develops, stirring daily, 2 to 3 days.

5Put in 1 cup covered crocks or jars and refrigerate.

6Makes 3 cups.
