Ingredients

  • 3 packages dry yeast
  • 1/2 cup warm water
  • 1 cup warm water
  • 2/3 cup sugar
  • 3 tbsp instant potato flakes

Directions

    Dissolve yeast in 1/2 cup warm water, then feed with warm water, sugar, and potato flakes.

    Let mixture stand all day, loosely covered, then refrigerate 2 to 5 days

    Take it out, feed of again with 1 cup warm water, 3/4 cup sugar and 3 Tbsp instant potato flakes.

    Again, let it sit out all day or overnight (8 - 12 hours), loosely covered.

    Now you are ready to pour off 1 cup starter to use in making the first batch of bread.

    Store the rest on the refrigerator, feeding every 3 to 5 days.

    If not making bread after feeding starter, give or throw away 1 cup.

    It may be fed 2 or 3 times before using for bread.
