- 3 packages dry yeast
- 1/2 cup warm water
- 1 cup warm water
- 2/3 cup sugar
- 3 tbsp instant potato flakes
Directions

1Dissolve yeast in 1/2 cup warm water, then feed with warm water, sugar, and potato flakes.

2Let mixture stand all day, loosely covered, then refrigerate 2 to 5 days

3Take it out, feed of again with 1 cup warm water, 3/4 cup sugar and 3 Tbsp instant potato flakes.

4Again, let it sit out all day or overnight (8 - 12 hours), loosely covered.

5Now you are ready to pour off 1 cup starter to use in making the first batch of bread.

6Store the rest on the refrigerator, feeding every 3 to 5 days.

7If not making bread after feeding starter, give or throw away 1 cup.

8It may be fed 2 or 3 times before using for bread.
