- 1 pkg. active dry yeast (don't use quick rising)
- 2 1/2 c. warm water
- 2 c. flour
- 1 Tbsp. sugar or honey
Directions

1In a large bowl, dissolve yeast in 1/2 cup warm (105° to 115°) water.

2Stir in 2 cups warm water, flour and sugar or honey.

3Beat until smooth.

4Cover bowl with cheesecloth and let stand at room temperature for 5 to 10 days or until mixture has a fermented aroma, stirring 2 to 3 times a day.

5To store, transfer to a jar. Cover with cheesecloth and refrigerate.

6Do not cover tightly with a metal lid.
