  • 1 pkg. active dry yeast (don't use quick rising)
  • 2 1/2 c. warm water
  • 2 c. flour
  • 1 Tbsp. sugar or honey

Directions

    In a large bowl, dissolve yeast in 1/2 cup warm (105° to 115°) water.

    Stir in 2 cups warm water, flour and sugar or honey.

    Beat until smooth.

    Cover bowl with cheesecloth and let stand at room temperature for 5 to 10 days or until mixture has a fermented aroma, stirring 2 to 3 times a day.

    To store, transfer to a jar. Cover with cheesecloth and refrigerate.

    Do not cover tightly with a metal lid.
