- 1/3 c. flour
- 1 1/2 c. sifted cornmeal
- 1 tsp. baking soda
- 2 eggs
- 1 c. buttermilk
- 2 c. milk
- 1 1/2 Tbsp. butter
- 1/2 tsp. salt
Directions

1Preheat oven to 350°.

2Sift the flour, cornmeal, baking soda and salt into a mixing bowl.

3Beat the eggs until foamy and stir them into the dry mixture.

4Stir in the buttermilk and 1 cup of the milk.

5Heat the butter in a 9 x 2-inch black skillet and when it is very hot, but not brown, pour in the batter.

6Carefully pour the remaining 1 cup of milk on top of the batter, without stirring.

7Place the skillet in the oven and bake 50 minutes or until set and baked through.

8Slice into wedges.

9Serves 8.
