Ingredients
- 2 lb. smoked ham
- 1 1/2 c. chopped onion
- 2 cloves garlic, minced
- 3 Tbsp. shortening
- 1/2 c. minced green pepper
- 1/2 lemon, cut in 2 wedges
- 1/2 tsp. pepper
- 1/4 tsp. thyme
- 1 (16 oz.) can tomato
- 1 c. uncooked rice
- 1 1/2 c. hot water
Directions

1Cut ham into 1/2 inch

2cubes and set aside.

3Cook onion and garlic in shortening until tender.

4Add ham and brown lightly; pour off drippings.

5Add green pepper, lemon, pepper, thyme, tomatoes, rice and water.

6Cover tightly and simmer 25 or 30 minutes or until rice is fluffy.

7Yields 10 servings.
