- 1 can corn (or 2 cups frozen)
- 1 can black beans
- 4 green onions, thinly sliced
- 1 small onion, peeled and diced
- 1 red bell pepper stemmed, seeded and diced
- 2 jalapeno, stemmed, seeded and minced (or can used 1 can green chilies)
- 2 garlic cloves, peeled and minced or pressed
- 1 tablespoon vegetable or canola oil
- 1.5 cups cheddar or pepper jack cheese
- 1/4 cup chopped cilantro or parsley
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 20 egg roll wrappers
