- 1 1/2 c. frozen corn, thawed
- 1 1/2 c. chopped plum tomatoes
- 3/4 c. thinly sliced green onions
- 1/3 c. minced fresh cilantro
- 1/2 c. oil
- 1/2 c. lemon juice
- 2 tsp. salt
Directions

1Toss together first 5 ingredients in a bowl. Whisk together oil, lemon juice and salt; pour over black bean mixture, stirring gently to coat. Cover and chill at least 8 hours. Serve at room temperature or chilled.
