Southwestern Rice Pilaf

- 2 Tbsp. olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 c. long grain white rice
- 1 1/2 c. canned beef broth
- 1 tomato, diced
- 1 large jalapeno chili, minced
Directions

1Heat olive oil in heavy large skillet over medium-high heat. Add onion, bell pepper, carrot and celery and saute until vegetables begin to soften, about 5 minutes.

2Add broth and bring to simmer.

3Cover skillet; reduce heat to low and simmer until rice is tender and broth is absorbed, about 20 minutes.

4Mix in tomato and jalapeno.

5Season pilaf with salt and pepper to taste and serve.
