- 1 lb. dried pasta
- 2 Tbsp. butter
- 2 Tbsp. olive oil
- 4 oz. pancetta or bacon
- 1/4 c. dry white wine
- 4 egg yolks
- 3 Tbsp. grated Parmesan cheese
- 1 Tbsp. grated Romano cheese
- 1 Tbsp. chopped parsley
- salt and pepper
Directions

1Put butter and oil in skillet over medium-high heat.

2Add pancetta (in thin strips) and cook until browned (not crisp). Add wine and cook until reduced by half.

3Remove from heat and set aside.
