Spaghetti Carbonara

  • 1/4 lb. slab bacon, cut into small chunks
  • 1 lb. spaghetti
  • 1 large onion, chopped coarsely
  • 1/2 lb. mushrooms, cut into halves or fourths
  • 3/4 c. grated Parmesan cheese
  • 1 c. heavy cream
  • 1/4 c. butter
  • 2 Tbsp. chopped parsley
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 c. white wine

Directions

    Saute bacon, onion and mushrooms until bacon is cooked.

    Add wine and simmer 10 minutes.

    Cook pasta and drain; toss with butter.

    Stir in cream and add cheese and parsley.

    Put bacon mixture on top of pasta.

    Serve with extra cheese.
