- 4 Tbsp. olive oil
- 1 medium sized yellow onion
- 2 large cloves garlic, peeled, but not chopped
- salt to taste
- black pepper (do not skimp)
- water (use 1 tomato paste can and fill it up about 10 times)

2at the start as evaporation adds to the richness.

3Do not add sugar or soda to the sauce.

4To lessen the acid taste, long slow cooking and the addition of meat will remove all trace of acid.
