- 5 lb. ground beef
- 3 lb. Italian or pork sausage
- 2 to 3 lb. pork neck bones
- 1/3 c. oregano
- 1/2 c. olive oil
- salt and pepper
- 1/2 pkg. diced celery
- 2 to 3 diced green peppers
- 1 1/2 lb. onions, chopped
- garlic
- 2 c. sugar
- 1 (No. 10) can tomato paste
- 1 (No. 10) can tomato puree
- 2 (No. 10) cans water
Directions

1Brown meat in olive oil.

2Add rest of ingredients and simmer, stirring occasionally, for 5 to 7 hours.

3Cool and remove bones. (Pork shoulder can be substituted for neck bones so you don't have to pick the bones.)

4Recipe makes 16 quarts and serves about 80.
