Ingredients

  • 5 lb. ground beef
  • 3 lb. Italian or pork sausage
  • 2 to 3 lb. pork neck bones
  • 1/3 c. oregano
  • 1/2 c. olive oil
  • salt and pepper
  • 1/2 pkg. diced celery
  • 2 to 3 diced green peppers
  • 1 1/2 lb. onions, chopped
  • garlic
  • 2 c. sugar
  • 1 (No. 10) can tomato paste
  • 1 (No. 10) can tomato puree
  • 2 (No. 10) cans water

Directions

    Brown meat in olive oil.

    Add rest of ingredients and simmer, stirring occasionally, for 5 to 7 hours.

    Cool and remove bones. (Pork shoulder can be substituted for neck bones so you don't have to pick the bones.)

    Recipe makes 16 quarts and serves about 80.
