Spaghetti Squash Casserole

  • 1 small (1 1/2 to 2 lb.) spaghetti squash
  • 1/2 c. water
  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1/2 c. chopped sweet red pepper
  • 1 garlic clove, minced
  • 1 (8 oz.) can tomatoes with liquid, cut up
  • 1/2 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. (4 oz.) shredded Mozzarella or Cheddar cheese
  • 1 Tbsp. chopped fresh parsley

Directions

    Cut squash in half lengthwise; scoop out seeds.

    Place with cut side down in a baking dish; add water.

    Cover and bake at 375° for 20 to 30 minutes or until it is easily pierced with a fork. When cool enough to handle, scoop out squash, separating the strands with a fork.
