- 1 small (1 1/2 to 2 lb.) spaghetti squash
- 1/2 c. water
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1/2 c. chopped sweet red pepper
- 1 garlic clove, minced
- 1 (8 oz.) can tomatoes with liquid, cut up
- 1/2 tsp. dried oregano
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 c. (4 oz.) shredded Mozzarella or Cheddar cheese
- 1 Tbsp. chopped fresh parsley
Directions

1Cut squash in half lengthwise; scoop out seeds.

2Place with cut side down in a baking dish; add water.

3Cover and bake at 375° for 20 to 30 minutes or until it is easily pierced with a fork. When cool enough to handle, scoop out squash, separating the strands with a fork.
