Spaghetti With Tomato Carbonara

- 5 slices bacon
- 1 small onion, chopped (1/4 cup)
- 2 tablespoons tomato paste
- 1 lb spaghetti
- 3 large eggs
- 34 cup parmesan cheese
- 3 tablespoons parsley
Directions

1Bring a salted pot of water to boil.

2Place bacon in cold skillet and cook over medium heat until crisp.

3Remove bacon and add onion to skillet.

4Cook until soft.

5Add tomato paste and cook for 1 minute.

6Cook the pasta, reserve 1 cup of cooking water.

7Return skillet to low heat.

8Whisk eggs and parmesan in a medium bowl.

9Add the beaten eggs, pasta and half of the cooking water into the skillet.

10Cook, stirring continuously, until the eggs are thickened, about 2 minutes.

11Add bacon, parsley, and more pasta water if needed to coat pasta in sauce.

12Season with salt and pepper to taste.
