  • 10 lb. fresh spinach
  • 1 1/2 c. olive oil
  • 2 large onions, chopped
  • 1 bunch scallions, chopped
  • 1 bunch parsley, chopped
  • 1/2 c. dill leaves
  • 1/4 c. mint leaves
  • 1/4 c. oregano, crushed
  • salt and pepper to taste
  • 1 1/2 lb. Feta cheese
  • 2 c. milk
  • 4 eggs, beaten
  • 1 1/2 ??? olive oil
  • 1/2 ??? vegetable oil
  • 2 pkg. filo

Directions

    Cook onions, scallions and parsley with olive oil.

    Add spices and cook on low heat, stirring constantly.

    In a bowl crumble cheese and add milk and eggs.

    Pour over chopped spinach and mix. Add cooled herbs and mix well.
