  • 2 lb spinach
  • 1 bunch green onion
  • 1 lb Greek feta cheese ( crumbled )
  • 7 eggs
  • 1 lb butter, melted
  • 1 lb phyllo sheets

    Wash spinach and allow to drain overnight in a colander

    Cut coarse stems off and discard

    Chop spinach and green onions in large mixing bowl

    Add crumbled cheese, UNBEATEN EGGS, and season to taste with salt and pepper

    Pour half melted butter over spinach mixture and toss lightly to combine all ingredients

    Place six pastry sheets in greased pan, spreading each with melted butter

    Sprinkle with spinach mixture, alternating buttered pastry sheets and butter

    Cover with six individually buttered pastry sheets

    Use a 10 X 15 pan

    Bake at 350* for 1 hour

    After pie baked for 30 min, remove from oven pour remainder of melted butter over entire pie

    Replace in oven and continue baking remainder of the 30 min

    Cool and cut in to squares
