- 1 onion, peeled, diced
- 3 bunches spinach, washed 3 times
- 2 tablespoons olive oil
- 1 1/2 cups rice
- 1 tablespoon tomato paste
- 3 cups water, boiling
- 1 chicken stock cube
- salt & pepper
Directions

1Chop spinach roughly.

2Heat oil and saute onion for 10 minutes Add rice and spinach and tomato paste. Saute 5 minutes.

3Add water and stock cube and seasoning, mix well.

4Bring to boil and turn down heat and cook for 20mins or until rice is soft.

5Serve.
