- 2 Tbsp. olive oil
- 1 1/2 c. brown rice
- 1/2 bell pepper, chopped
- 1 Vidalia onion, chopped
- 2 Tbsp. chili powder
- 1 tsp. cooked, chopped garlic
- 1 large can crushed tomatoes
- 1 can water
- grated Cheddar cheese
Directions

1Brown garlic, rice and onion in olive oil.

2Add pepper and brown.

3Add chili powder, tomatoes and water.

4Bring to a boil and cook on low heat until all liquid is absorbed and rice is tender, about 45 minutes.

5Check after 25 minutes and add more water if needed.

6Serve with grated cheese on the side to be added just before eating.
