Spanish Cauliflower

  • 1 head cooked cauliflower
  • 1/2 tsp. thyme, minced
  • 2 Tbsp. grated cheese
  • sprinkle of pepper
  • 1 Tbsp. low-fat margarine
  • 2 1/2 c. fresh tomatoes, cut up
  • 1/2 c. soft diet bread crumbs (whole wheat)
  • 1/2 to 1 Tbsp. Tabasco sauce

Directions

    Place cauliflower in shallow casserole that has been greased with 1 teaspoon canola oil.

    Add seasonings to tomatoes and bring to a rapid boil.

    Pour over cauliflower.

    Top with crumbs and dot with margarine.

    Sprinkle with paprika and grated cheese.

    Bake at 350° for 30 minutes.
