Spanish Chicken

  • 1 (2 1/2 to 3 lb.) chicken
  • 3 to 4 Tbsp. Crisco
  • 1 c. raw rice
  • 1 c. onion, chopped
  • 1 green pepper, sliced
  • 2 c. water
  • 2 (8 oz.) Hunt's tomato sauce
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 1/4 tsp. pepper

    Brown chicken in Crisco.

    Take up chicken (keep warm).

    Put rice, onion and green peppers in pan.

    Brown lightly.

    Add water, tomato sauce and rest of ingredients.

    Simmer 40 minutes or until rice is done.

    About 10 minutes before it is done, add 1/4 cup Parmesan cheese and then chicken.

    Cover and finish cooking.

    If it gets too dry, add more water.
