  • 2 broiler-fryers, quartered (about 2 1/2 lb. each)
  • 1/4 c. all-purpose flour
  • 1/4 c. vegetable oil
  • 1 1/2 c. regular rice
  • 3 c. water
  • 1 envelope Spanish rice seasoning mix
  • 1 large green pepper, cut into 8 rings
  • 1 c. sliced stuffed green olives
