- 2 lbs flounder fillets
- 1 garlic clove, minced
- 2 medium tomatoes, thinly sliced
- 2 tablespoons parsley
- 1/2 small cucumber, thinly sliced
- 1 tablespoon white wine
- 1/4 cup onion, chopped
- 2 tablespoons lemon juice
- 1/4 cup green pepper, chopped
- 1/2 teaspoon marjoram
- 2 tablespoons butter or 2 tablespoons margarine
Directions

1Place fish fillets in a non-stick or greased baking dish.

2Arrange tomato and cucumber slices on top.

3In a saucepan, cook onion, green pepper, and minced garlic in butter until onion is tender, but not brown.

4Remove from heat.

5Stir in parsley, wine, lemon juice, and marjoram.

6Spoon over fish.

7Bake in 375°F oven for about 25 minutes, or until fish flakes easily when tested with a fork.

8Serve with wild rice.
