  • 1 med. onion, chopped
  • 1 green pepper, chopped
  • 2 T. butter or margarine
  • 1 c. tomatoes, cooked or canned
  • 1 t. worcestershire sauce
  • 1 t. salt
  • 1/4 t. pepper
  • 1/8 t. cayenne pepper
  • 2 c. lima beans, cooked, frozen or canned
  • 1 1/2 c. grated cheese

Directions

    Fry onion and pepper slowly in butter until golden. Add tomatoes and simmer for 10 minutes. Add seasonings and drained beans. Alternate layers of bean mixture and cheese in a greased 1-quart casserole dish. Bake at 350° for 30 minutes. Makes 6 servings.
