Spanish Pinto Beans

  • 1 pkg. (1 lb. or more) pinto beans
  • 1 medium size onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, crushed
  • 1 can tomato sauce
  • 4 or 5 sprigs cilantro (coriander), chopped
  • 2 Tbsp. olive oil
  • salt to taste

Directions

    Boil beans until tender. In a large skillet put olive oil and heat for 3 to 4 minutes.

    Add the other ingredients and saute for 5 minutes.

    Pour this sauce over the beans and cook for 10 minutes.

    For better flavor, add cut up lean ham to the sauce.
