Spanish Pot Roast

Ingredients

  • 1/4 c. oil
  • 1 O-bone roast, remove fat and bone, cut into very large chunks
  • 1 jar chunky salsa (16 oz.)
  • 1 (8 oz.) can tomato sauce
  • 3 Tbsp. sugar
  • 2 Tbsp. soy sauce
  • 1/2 tsp. cumin
  • 1 tsp. salt, pepper and garlic
  • 1 bell pepper, chopped
  • 2 large onion, chopped
  • 2 c. raw long grain rice
  • 3 c. hot water

    Brown meat in oil until loses pink.

    Add everything except rice.

    Simmer 2 hours; stir occasionally.

    Add rice and simmer 1 more hour.

    Stir occasionally.

    If becomes dry before rice is done, then add more water.

    Cook in large Dutch oven size pan. Cook covered.
