- 6 slices bacon
- 1 c. uncooked regular or brown rice
- 1/4 c. chopped green pepper
- 1 medium onion, sliced
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 c. water
- 1/4 c. catsup
- 16 oz. (2 c.) tomatoes (undrained), chopped
Directions

1In large skillet, fry bacon until crisp; drain on paper towel. Reserve 2 tablespoons drippings.

2Cook rice, onion and green pepper in drippings until onion is tender.

3Add crumbled bacon and remaining ingredients.

4Simmer, covered, 30 to 45 minutes or until rice is tender and liquid is absorbed.
