- 1/2 to 1 lb. bacon
- 1/4 c. green pepper
- 1/4 c. onion
- 3 c. cooked rice
- 1 1/2 tsp. salt
- 1 can tomatoes (1 qt.) large
- 1 can (large) tomato sauce
- 1 c. grated cheese (Cheddar)
Directions

1Fry bacon.

2Crumble and toss 1/2 of bacon in large baking dish. Saute onion and green pepper until onion is lightly brown.

3Add rice, tomatoes, salt and tomato sauce.

4Mix together and put 1/2 of mixture in baking dish.

5Crumble rest of bacon and put on first layer of rice mixture.

6Then add rest of rice mixture.

7Add grated cheese on top.

8Bake at 400° for 20 to 25 minutes.
