Ingredients

  • 1 c. white rice
  • 5 Tbsp. butter
  • 2 cloves garlic, peeled and minced
  • 1/2 onion, peeled and minced
  • 2 1/4 c. water
  • 1 tsp. cumin
  • 1 tsp. dried oregano
  • 3 Tbsp. tomato paste
  • 1 tsp. salt
  • 1 large tomato, chopped
  • 2 chicken bouillon cubes

Directions

    Melt butter in a large skillet and saute garlic, onion and rice until garlic and onion are soft.

    Add remaining ingredients and bring to boil.

    Cook for 2 minutes.

    Reduce heat, cover and simmer for 20 to 25 minutes, until the water has evaporated.

    Remove from heat and let stand for 5 minutes.
