  • 6 slices bacon
  • 1 medium onion, chopped
  • 1 small green pepper, chopped
  • 1 (28 oz.) can tomatoes
  • 1 c. water
  • 3/4 c. rice (raw)
  • 1 Tbsp. brown sugar
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. salt
  • 1 tsp. chili pepper
  • 1/8 tsp. pepper
  • dash of bottled hot pepper sauce

Directions

    Cook bacon until crisp; drain on paper toweling, crumble and set aside.

    Drain fat from pan, reserving 2 tablespoons drippings in skillet.

    In bacon drippings, cook onion and green pepper until tender.

    Stir in the next 9 ingredients; cover and simmer for about 30 minutes or until rice is done.

    Add a little water if needed.

    Be sure to dice the tomatoes up, but use all juice.
