- 1/2 lb. bacon
- 1 medium onion, diced
- 1/4 c. catsup
- 1 Tbsp. Worcestershire sauce
- 1 qt. tomato juice
- 1 bell pepper, diced
- 2 c. Minute rice
Directions

1Fry bacon crisp, remove from heat and crumble.

2Pour off all but 2 tablespoons bacon drippings.

3Cook onion and pepper in bacon drippings until onion is clear.

4Add tomato juice, catsup and Worcestershire sauce.

5Bring to a boil.

6Add rice and bacon; mix well.

7Cover with a tight fitting lid and remove from heat.

8Some people like their Spanish Rice dry, others prefer it juicy. Adjust the rice to suit your taste.
