- 1 large tomato, chopped
- 1 medium onion, chopped
- 2 Tbsp. butter
- 2 c. cooked rice
- 1/3 c. water
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1In a 1-quart microwave-safe casserole dish, combine green pepper, tomato, onion and butter.

2Cook, covered, on High for 5 to 6 minutes or until vegetables are tender, stirring once.

3Stir in cooked rice, water, salt and pepper.

4Cook, covered, on High for 3 to 4 minutes or until mixture is heated through, stirring once. Makes 6 side-dish servings.
