Ingredients

  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped celery
  • 1 clove garlic
  • 1 Tbsp. cooking oil
  • 1 (28 oz.) can chopped or crushed tomatoes
  • 1/4 lb. bacon
  • 1/2 lb. lean hamburg
  • 3/4 c. long grain rice
  • 1 tsp. chili powder
  • 1 tsp. sugar
  • 1/2 c. shredded Cheddar cheese (optional)

Directions

    Cook in large skillet, onion, green pepper, celery and garlic in oil until tender, but not brown.

    Fry bacon until fairly crisp. Drain and crumble.

    Cook hamburg in frypan or microwave until there is no pink.

    Combine with vegetables in large skillet.

    Add undrained tomatoes, rice, sugar, chili powder, pepper and 1 cup of water.
