- 1 c. rice
- 1 large bell pepper, chopped
- 1 jalapeno pepper, chopped
- 1 large onion, chopped
- 3/4 c. water
- 3 c. canned whole tomatoes
- 1 tsp. cumin
- 1 tsp. black pepper
- dash of red pepper
- 1 Tbsp. salt
- 3 tsp. chili powder
Directions

1Heat oil in skillet.

2Add rice and cook until brown.

3Add peppers and onion and saute.

4Add the rest of the ingredients and stir well.

5Cook, covered, on low heat for 20 to 25 minutes.
