Spanish Rice

Ingredients

  • 4 c. rice
  • 1 sweet onion
  • 1 pepper
  • 2 cans sliced olives
  • olive oil
  • chorizo (about 3)
  • hamburger (optional)
  • 1 tsp. dry mustard
  • 3 cans stewed tomatoes
  • 3 cloves
  • salt and pepper to taste
  • 1 c. Cheddar cheese, grated

Directions

    Cook rice according to instructions.

    Saut onions and peppers in olive oil.

    Remove.

    Cook hamburger until done.

    Cook chorizo. (Might need more olive oil.)

    Combine all ingredients, except grated cheese.

    Put into baking dish and put cheese over top.

    Bake at 375° for 35 minutes.
