- 3/4 c. rice (not Minute)
- 2 Tbsp. fat (can use oil)
- 2 onions, cut up
- 2 c. canned tomatoes
- 1/2 c. chopped green pepper
- 1 small jar pimento
- salt, pepper and paprika
Directions

1Fry the raw rice in fat until brown.

2Cook as instructed on package (not quite done).

3Saute the onions in 2 tablespoons fat (oil).

4Mix with tomatoes and peppers; add pimento.

5Add all the rice.

6Mix well.

7Season to taste.

8Place in greased casserole. Bake at 350° for 30 minutes.
