Spanish Rice

  • 3/4 c. rice (not Minute)
  • 2 Tbsp. fat (can use oil)
  • 2 onions, cut up
  • 2 c. canned tomatoes
  • 1/2 c. chopped green pepper
  • 1 small jar pimento
  • salt, pepper and paprika

Directions

    Fry the raw rice in fat until brown.

    Cook as instructed on package (not quite done).

    Saute the onions in 2 tablespoons fat (oil).
  4. 4
    Mix with tomatoes and peppers; add pimento.

    Add all the rice.

    Mix well.

    Season to taste.

    Place in greased casserole. Bake at 350° for 30 minutes.
