Spanish Rice

  • 2 Tbsp. bacon drippings or oil
  • 1 1/2 c. uncooked long grain rice
  • 1 (8 oz.) can tomato sauce
  • 2 to 3 c. water
  • 1/4 tsp. garlic salt or 1 clove garlic, minced
  • 1/2 tsp. onion salt or 1 small onion, minced

Directions

    Heat bacon drippings or oil over medium heat in large skillet. Add rice, stirring constantly, until rice is browned.

    Be careful not to burn rice.

    Turn burner off.

    Add tomato sauce, water and salts or garlic and onion.

    Cover immediately.

    Simmer over low heat until all liquid is evaporated and rice, onion and garlic are tender, 25 to 30 minutes.

    Add more water if necessary to prevent drying.

    Serve immediately.

    Makes 4 to 6 (1/2 cup) servings.
