- 1 c. chopped onions
- 3/4 c. chopped green peppers
- 2/3 c. uncooked long grain rice
- 2 tsp. salt
- 1/2 tsp. pepper
- 3 1/2 c. tomatoes or 1 (No. 2) can tomatoes
Directions

1Mix together.

2Add bay leaf when rice mixture is in casserole. Bake at 350° for 1 1/2 hours or until rice and vegetables are cooked.

3Remove bay leaf before serving.
