Spanish Rice

  • 6 or 8 slices bacon
  • 1/4 c. chopped green pepper
  • 1/2 c. chopped celery
  • 1 tsp. salt
  • 1 1/4 c. instant rice, uncooked
  • 3 c. canned tomatoes (28 oz. crushed tomatoes equals 3 c.)
  • 2 tsp. sugar
  • 1 tsp. Worcestershire sauce

Directions

    Fry bacon until crisp and crumble in small pieces.

    Add green pepper and celery to bacon drippings; saute.

    Combine in baking dish the remaining ingredients.

    Cheese is optional (American or Cheddar) sprinkled over top (grated cheese, 1 cup or more).

    Bake at 400° for 30 minutes.
