- 1 lb. bacon
- 3 c. Minute rice
- 1 qt. canned tomatoes
- 1/4 lb. Velveeta cheese
- salt and pepper to taste
Directions

1Cook bacon until crisp, then crumble or cut into small pieces before cooking and cook until well done.

2Cook Minute rice according to directions on box.

3Put tomatoes and 1/2 of cheese (cut in small pieces) in a 9 x 13-inch cake pan.

4Add bacon pieces and rice.

5Stir until well mixed.

6Add rest of cheese, cut in small pieces, and salt and pepper to taste.

7Bake at 350° for 45 minutes to 1 hour or until slightly browned on top.
