Ingredients

  • 2 Tbsp. vinegar
  • 2 Tbsp. Worcestershire
  • 3/4 c. ketchup
  • 1 tsp. chili powder
  • 1 tsp. paprika
  • 1/2 tsp. black pepper
  • 3/4 c. water
  • 2 lb. boneless chuck roast
  • 2 Tbsp. fat
  • 2 medium onions, thinly sliced

Directions

    Combine vinegar, Worcestershire, ketchup, chili powder, paprika, pepper and water; bring to boil and remove from heat. Salt roast to taste, then braise on both sides in hot fat.

    Place in a roasting pan on a piece of foil large enough to cover.

    Top with hot sauce and onions.

    Seal foil and bake in a 300° oven for 2 1/2 to 3 hours or until meat is tender, basting frequently with the sauce.
