Spanish Style Chicken

Ingredients

  • 2 or 3 c. cooked chicken, cut up
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 Tbsp. shortening
  • 1/2 c. chopped onions
  • 1 clove garlic, minced
  • 1 c. tomato juice
  • 2 c. chicken broth
  • 1 c. long grain rice, uncooked
  • 1 (10 oz.) pkg. frozen peas (2 c.)
  • 1/4 c. chopped canned pimento
  • 1 (16 oz.) can tomatoes, cut up

Directions

    Season chicken with salt and pepper.

    In skillet, brown chicken in hot shortening. Add onions and garlic.

    Cook onions until brown but not burned.

    Add tomato juice and 1/2 cup chicken broth.

    Cover and simmer for 20 minutes.

    Add rice and remaining broth. Simmer and cover for 20 minutes.

    Add peas and pimento. Simmer for 5 minutes more or when the peas are done.
