Spanish Style Chicken

- 2 or 3 c. cooked chicken, cut up
- 1 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. shortening
- 1/2 c. chopped onions
- 1 clove garlic, minced
- 1 c. tomato juice
- 2 c. chicken broth
- 1 c. long grain rice, uncooked
- 1 (10 oz.) pkg. frozen peas (2 c.)
- 1/4 c. chopped canned pimento
- 1 (16 oz.) can tomatoes, cut up
Directions

1Season chicken with salt and pepper.

2In skillet, brown chicken in hot shortening. Add onions and garlic.

3Cook onions until brown but not burned.

4Add tomato juice and 1/2 cup chicken broth.

5Cover and simmer for 20 minutes.

6Add rice and remaining broth. Simmer and cover for 20 minutes.

7Add peas and pimento. Simmer for 5 minutes more or when the peas are done.

8Serves 6 people.
