Special Fried Rice

Ingredients
- 1 small onion
- 2 oz. mushrooms
- 2 oz. carrots
- 4 eggs
- 1 tsp. salt (optional)
- 3 Tbsp. oil
- 5 oz. shrimp
- 1 lb. cooked rice
- 2 oz. peas
- 2 Tbsp. soy sauce
Directions

1Cut onion, mushrooms and carrots into thin slices.

2Beat eggs with salt.

3Set wok at 420° (or hot pan).

4Heat oil; add onions and carrots and stir-fry for 1 minute.

5Add mushrooms and shrimp and fry for another minute.

6Push to one side and pour eggs in the other side.
-
7Cook for 2 minutes.

8When eggs are nearly set, add rice, peas and soy sauce.

9Mix all ingredients together and cook for a minute more.
